Oil sorption from batter to pork slice may lead to protein oxidation, resulting in taste deterioration which hampers industrialization of battered and fried pork slices (BAF). This study was aimed overcoming these problems. Moisture loss and oil sorption were determined at temperatures of 0, 10, 20, 30 and 40°C after preparation of BAF. Modeling of kinetics of mass transfer was established based on standard procedures. Texture profile analysis, shear force measurement and color measurement were also carried out. The results obtained showed that in terms of cost and convenience, short term storage of BAF for less than 6 h at 20°C can maintain the tenderness and taste of BAF while extending its shelf life.

Flood disaster risk assessment and zoning is the important content of flood disaster assessment and management and can provide scientific basis for flood disaster early warning and disaster prevention and mitigation work. By analyzing the formation and impact factors of floods, the paper built a flood index system, including dangerousness, exposure, vulnerability, disarster prevention and mitigation capability. Also, a comprehensive evaluation index was built using the weighted composite index method, in which the weight of each index was given by AHP, and the flood risk zoning was implemented by means of Arc-GIS spatial analysis methods. The results show that, there exists obvious differences in spatial distribution of the dangerousness, exposure, vulnerability, disaster prevention and mitigation capability in Heilongjiang Province. High dangerous areas are mainly distributed in most southwest regions and parts of northeast regions. High exposure distribution is scattered and distributed in the midwest in a small scope. High vulnerability is mainly scattered in the southwest. The overall disaster prevention and mitigation capability in Heilongjiang Province is mainly in the middle or low grade. In a whole, integrated risk is higher in the southwest, northeast, where the rivers are converged and the terrain is flat, than in the northwest, central and southeast. Foe example, in Sanjiang and Songnen Plains, flood disaster risk is higher. However, in northwest-southeast mountain areas ( Daxing' an Mountain range, Xiaoxing' an Mountain range, Zhangguangcai mountain, Changbai mountain region ), flood disaster risk is small and basically is of light and low risk levels. In all, middle and high risk counties account for about half of all of Heilongjiang counties, which reflects a large impact and a high risk of flood disasters in Heilongjiang Province. So flood disaster early warning and improvement of disaster prevention and mitigation capability was a serious problem Heilongjiang Province has to face.

The effect of cultivated land change in Songneng Plain during 1980-2000 on drought probability was analyzed using rainfall data and TM images and tendency plane and residual abnormal value methods. Results show that, the cultivated land area of the Songneng Plain presents an overall increasing trend from 1980 to 2000, and the increased area progressively diminishes from west to east; drought frequency also shows a gradually declining trend from west to east in spatial distribution, corresponding to the spatial distribution of the cultivated land. The area covered by positive residual abnormal values of drought frequency is significantly larger than that covered by negative residual abnormal values; the area of the cultivated land converted from positive residual abnormal values is larger than the area of other land use types converted from the positive residual abnormal values. The increase in the cultivated land of the Songneng Plain is one of the factors that have brought about serious drought, which should have people's attention.
