A system and method of ultrasonic processing of pre-baked food product and/or food product rework is provided that includes an ultrasonic horn (105) and a forming member (110) for receiving and forming unprocessed pre-baked food product into a desired shape. The ultrasonic horn is actuated to compress the unprocessed pre-baked food product between the ultrasonic horn and the forming member. The ultrasonic horn ultrasonically energizes the compressed pre-baked food to form an agglomerated food product. The system may also include an ejection member (125) for ejecting the formed agglomerated food product away from the forming member. The forming member may be a forming cylinder having a hemispherical protrusion that conforms to a contour of a hemispherical forming cavity located on a compressive surface of the ultrasonic horn.

Method of producing a packed food product, comprising: cooking a food product at a cooking temperature of at least 100C; introducing the cooked food product into an atmosphere of superheated steam, the atmosphere of superheated steam containing less than 3% of oxygen and having a temperature of at least 120C; drying the food product to an a_(w)-value in the range from 0,70 to 0,92; in the superheated steam atmosphere, packaging the food product in a packaging container, feeding a protective gas into the packaging container and hermetically sealing the packaging container, and food product packed in a packaging impermeable to O_(2), obtainable by a method of any of the preceding claims, wherein the food product has an a_(w)-value in the range from 0,70 to 0,92 and the packaging contains a protective gas.

Embodiments disclosed herein related to an apparatus for the manufacture of a multiregion confection. The apparatus includes a housing defining a holding cavity configured to hold inclusions, a suction cavity, and a port. The apparatus also includes a disk rotatably mounted with respect to the holding cavity. The disk defines a plurality of apertures for holding the inclusions. As the disk rotates the plurality of apertures move with respect to the housing such that each of the plurality of apertures arrives at a first location where the aperture is exposed on one side of the disk to the holding cavity and on the reverse side of the disk to a suction cavity. Inclusions released from the plurality of apertures at a second location travel into the port. The inclusions travel from the port to a nozzle which is configured to direct the inclusions to combine with the extrudable material.

Natural blue colorant compositions and methods of use thereof are provided. The colorant compositions include at least one acylated anthocyanin, such as a diacylated anthocyanin. The colorant composition can further include a buffer solution having a pH from about 6.0 to about 8.0 and a metal ion or salt form thereof. The colorant compositions can be derived from a natural product and provide a stable, blue colorant that can be used in food products.

A method for manufacturing a packed product includes the steps of: a) bringing a product into a superheated steam atmosphere with an O_(2 )content of maximum 10 vol.-%, a pressure of between 950 mbar and 1100 mbar and a temperature of minimum 100 C., b) making available a packing container in the steam atmosphere and filling the packing container with a predetermined quantity of the product, wherein a residual volume of the packing container not filled with product is filled with the steam atmosphere, c) replacing at least 50% of the residual volume of steam atmosphere in the packing container by a sterile inert gas, d) sealing the packing container, and e) cooling the packing container and the product contained therein to a temperature of between 10 C. and 25 C.

Methods are disclosed for producing a shaped baked good with a rounded shape. In one embodiment, the methods can include providing a dough comprising a high melting point fat and a granular sugar at a weight ratio of about 1:1 to form a rounded cookie piece that minimizes flattening during baking. The dough may be formed by passing the dough between opposing rollers or press plates to form a web. The web may then be baked, rehydrated, separated, and deflashed to form individual rounded cookie pieces.
