The phytosterol oleic acid ester has been synthesized by candida rugosa lipase as catalyst and microwave as heating sources. The effect of the content of reaction time, microwave power, catalyst amount and oleic acid-phytosterol ratio on the esterification rate have been carefully investigated through single factor experiment. Through orthogonal test, the optimal synthesis condition was determined as: reaction time of 36 min, microwave power of 550 W, catalyst amount of 9% and oleic acid-phytosterol ratio of 4:1. On the optimal reaction condition, the esterification rate between phytosterol and oleic acid reached up to 75.26%. By further purification, the purity of product reached 91.19%. In addition, the analysis results of gas chromatography-mass spectrometry and infrared spectrometry showed that the synthetic product was phytosterol oleic acid ester.
