Weight management is a complex process, incorporating not only genetic and environmental aspects but also behavioural factors. Controlled food intake is a way of maintaining a healthy weight, as well as weight-loss associated with physical activity. Achieving and maintaining a healthy weight requires a subtle and permanent change to some controllable intrinsic or extrinsic factors. Herbs and spices used traditionally for thousands of years have seen a renewed interest from researchers. They may have a role to play in weight management through different mechanisms, linked to their pharmacological properties on the one hand, and by promoting greater diversity and less boredom when it comes to food on the other. © Springer-Verlag France 2012.
