Every year, the food poisoning affect 380,000 inhabitants in EU. Food safety must be ensured by a preventive approach that modern production techniques are not able to guarantee, so in recent years new methods have been developed to increase levels of food safety. A new approach in this field could be given by the use of bacteriophages as bio scavengers; the FDA has recently regulated the use of bacteriophages in food. In this work we have observed the activity of bacteriophage P100 in relation to different food matrices, artificially contaminated with Listeria monocytogenes. The tests carried out show that the bacteriophage P100 is able to contain the growth of Listeria monocytogenes in different substrates examined. Moreover, this activity is extended over the time and isn't affected by low temperature storage. Source
