Objective: The paper aims at analyzing amino acid contents and composition of foot muscle and shell of RITAI Haliotis diversicolor and their reciprocal hybrids. Method: The amino acids were hydrolyzed by acid or base, extracted by sulfosalicylic acid, and at last it is estimated by the score of ratio coefficient of amino acid. Result: The foot muscle of three kinds of Haliotis diversicolor contains eighteen kinds of proteinaceous amino acid and three kinds of nonprotein amino acid. The SRCAA of foot muscle of three kinds of Haliotis diversicolors is all over 80%, and their E/T and E/N are consistent with the FAO/WHO proteinaceous model. The contents of TAA, EAA and other functional amino acids of foot muscle in Dongyou No.1 and Japan population are obviously higher than those of Taiwan population (P<0.05). The protein of shell of Haliotis diversicolors contain eighteen kinds of amino acid. The contents of TAA and EAA of shell in Dongyou No.1 are higher than those of its parents. Conclusion: The foot muscle protein of Haliotis diversicolor has high nutritional value and contains variety of amino acid, which is in reasonable proportions. It is the best source of high-quality protein. The amino acid nutrition of foot muscle and shell of Dongyou No.1 can be improved by hybridization and have some qualities that are superior to its parents. Source
