High performance liquid chromatography (HPLC) is used to study and identify the organic substances that result from the sorption-desorption processes occurring on the surface and in the near-surface layers of oak timber in contact with water-ethanol extracts (WEEs). The work is supplemented by a study of the antioxidant activities of WEEs, which was carried out using an amperometric detector. It is found that the antioxidant activity and the content of vanillin and syringaldehyde are usually higher for natural aged WEEs. © 2011 Pleiades Publishing, Ltd. Source
