When characterizing health threats, risk assessment mainly focuses on the contamination of ready to eat foods. However, the entry of the contaminant into the product can occur much earlier. Using the foodchain- approach, preceding stages of the food chain - from primary production to the consumer - are analyzed. The results of the quantitative chain analysis provide the basis for rational risk management measures within the production chain. Risk management options can be analysed economically and those measures maximizing the effect on food safety whilst minimizing the costs can be identified. This assessment is carried out using cost-effectiveness analysis.
