Sodium has been tested by AAS and AES contained in the wheat flour; ash digestion and wet digestion have been compared at the same time. The results showed that there are no large differences between the two pre-treatments method; at 0~10 mg/L concentration range of the standard curve by AAS method correlation coefficients is better than AES. While there are significant differences between AAS method and AES method when using the wet digestion; on the contrary, the two methods have no significant differences when using dry digestion. The result of AAS was slightly lower than that of AES. The wet digestion-AES determination in wheat flour content of sodium method is of high precision, as well as good accuracy.
